Short answer: EXIF (Exchangeable Image File Format) is a metadata standard that stores dozens of fields inside JPEG, HEIC and TIFF photos. The fields that matter most for privacy are GPS coordinates, date and time, camera serial number, owner name and the embedded thumbnail. This is a field-by-field reference.

The Technical Fields (Usually Harmless)
ISO, FNumber, ExposureTime, FocalLength, WhiteBalance, Flash, Orientation, ColorSpace, XResolution and YResolution describe how the image was captured or should be displayed. Where EXIF Lives in the File
EXIF sits in an APP1 marker segment near the start of a JPEG, structured as TIFF-style Image File Directories (IFD0 for the main image, ExifIFD for capture data, GPS IFD for location, IFD1 for the thumbnail). XMP, a separate XML-based standard, usually sits in a second APP1 segment and can duplicate the same values — which is why naive strippers leave copies behind. IPTC adds a third layer used by news agencies for captions and credits.
Removing "EXIF" properly means clearing all three: EXIF IFDs, XMP packets and IPTC records.

How to Read and Remove EXIF
To read: upload to an image metadata viewer, or run "exiftool photo.jpg" locally (ExifTool is the reference implementation).
